Daniel Weiss

President 

Daniel Weiss has been in the business space since 1989 when he started Carolina Computer Consultants, a successful POS software company. After selling the company, he supported Moore & Van Allen, PLLC, leading a team of technical professionals who architected, managed and supported all of the firm’s major IT functions, dramatically improving the firm’s IT platform, security posture, service levels, and data integrity. Most recently, Dan co-founded Varrow, Inc., a INC500 and NC FAST50 company which was later acquired by Sirius Computer Solutions, a national integrator of technology-based business solutions that span the enterprise, including the data center and lines of business, where he continued as the Senior Vice President of Sales Strategy and Planning.

Dan continues his expertise in putting together high performing teams in creating The Menagerie Hospitality Group.  To Dan, hospitality means welcoming all people as new friends to offer them authentic, custom and thoughtful service. With two unique concepts already underway, Dan looks forward to creating interesting and carefully-crafted venues for guests to enjoy their free time.

Sean logan keyser

Managing Partner,                     
Vice President, Brand Experience

Sean provides oversight for design, execution, and sustainability of brand features and qualities to guarantee the highest level of customer experience across the Menagerie portfolio. 

Sean's entire career has been centered around consumer experience in healthcare, retail, and hospitality. As a senior leader in numerous healthcare companies, he has led both operations and the design and execution of consumer experience strategy up to and including his role as Vice President & Customer Experience Officer for Novant Health.  Prior to joining The Menagerie Hospitality Group, Sean founded Cuemanity Partners, a recognized consumer strategy and experience design firm.

As an avid wine enthusiast, musician, and customer experience "geek," Sean brings his passion for all of these as fodder for creating customer delight for each Menagerie brand.

Ben Torres

Director of Operations

Ben oversees all things operational for each concept in the group. He is a 18 year veteran of the hospitality industry, starting early in the country club scene before accelerating to management at the young age of 18, and becoming a GM overseeing multiple locations at 25. Having majored in Business Management at Belmont Abbey College allowed for him to network effectively in the Charlotte market and hit the ground running before graduating. As a Level 1 Sommelier and Executive Bourbon Steward, he has embraced continued education as a vital aspect of his career, using those classes to elevate the service and offering levels at each concept he has led.
 
Ben enjoys playing both piano and guitar – and leads his local church’s contemporary group on the weekends. He and his wife Chelsea live in the University area of Charlotte, and welcomed their first child, Elizabeth, back in October of 2021.

rob florio

Beverage Director

Rob is responsible for developing all specialty cocktails, in addition to curating beer and wine menus at each concept. He is originally from Long Island, NY but has been in NC since '99. He is a lover of all things beverage, as he has completed his Level 1 Cicerone as well as his Executive Bourbon Steward exams, and puts the education to use daily in interactions with staff and guests at each concept.

His favorite classic cocktail is a well-made Negroni, though he loves to go off the beaten path with fun ingredients to spice things up for guests. Ingenuity knows no bounds, as he has launched barrel-aging cocktail competitions in town that everyone loves to participate in. 

When Rob is not creating delicious drinks, he enjoys disc golf, brewery hopping, and hanging with his wife and dogs.

kyle gaddas

Executive Chef

Chef Kyle Gaddas oversees all things culinary at each of the Menagerie concepts, and is no rookie in the art of culinary experiences. 


Most aspiring chefs go to culinary school right away – but Chef Kyle chose instead to study abroad in England, attending Susquenhanna University in pursuit of a Business Management Degree. Adventures continued to present themselves for Chef as he began playing darts competitively and traveling all over the world: New Zealand, Mexico, Florence, Rome, Prague, Kenya, Greece, and then Scotland where he would become engaged to his wife, Teri.  

Kyle later made his way to Denver, CO where he attended Johnson and Wales University and worked under Scott Parker at Session Kitchen. After completing his degree, Chef Kyle moved to Savannah, GA to put his craft to use at Churchill’s Pub learning a lot about Caribbean Cuisine. To this day, he continues to cook with a lot of fruit and chilies!


It only took a 20-minute meeting with Dan and Sean of The Menagerie Group for Chef Kyle to know he found his new culinary home. The impact he has made on this growing group in such a short time has been noticed by all – from creative syrups and garnishes for the bartenders, to sweet and savory small plates that leave everyone craving for more.


When Chef Kyle is not bouncing between our concepts, he enjoys spending his time with his wife and dogs. He is a man of many musical talents, playing instruments including classical guitar, Irish whistle, and bass guitar.
